Quick, super healthy lunch for the mom on the go!!!!

Today's post is dedicated to those mom's who need to eat healthy, feed the kids healthy and still be able to get out the door on time. If you are a parent you know first hand how hard this can be. We moms so often wind up depending on the old stand by drive through when we are in a rush. Not only are we handing our kids a greasy, over processed lunch, but the majority of the time we succumb to the drive through for our own nourishment. For those of us out there who are working on our figures this often results in instant eater remorse. To avoid this diet downfall I have some simple time saving, kid pleasing tips. First of all, and I can not stress this enough, PLAN AHEAD!!! A simple 10 minutes to pack a healthy, kid friendly meal can make a world of difference. The way I look at it is: I will probably be sitting in a crowded drive through line for around 10 minutes any way, why not take that time to prepare something healthy for me and my children?

Here is a recipe that is a kid pleaser as well as delicious for mom:


Fun Finger Pizza Rollers:


Ingredients:
  • 2 - 8 inch whole-wheat flour tortillas
  • 4 tablespoons low sodium tomato sauce
  • 1/4 tspn dried oregano
  • 24 baby spinach leaves
  • 6 tablespoons shredded skim mozzarella
Prep: (time 3 minutes)
  •  Lay tortillas flat on cookie sheet or toaster over rack (line with tin foil to save on cleaning time). Cover with tomato sauce, sprinkle with oregano, place a layer of spinach leaves and top with mozzarella. 
Cook: (time 5 minutes)
  • Place in 350 degree oven or toaster oven set on medium for 4 minutes or until cheese is melted. (tip: roll up mini pizzas while still warm so cheese will stick) Allow to cool for a few minutes before slicing into one inch mini rolls.
Nutrition facts (per serving)

217 calories; 7 g of fat; 2 g sat. fat; 1 g mono; 14 mg Cholesterol; 26 g carbohydrates; 10 g Protein; 3 g Fiber; 427 mg Sodium; 18 mg Potassium

Make this recipe ahead of time and pack for a quick, on the go, healthy lunch. The rollers are great warm or refrigerated. I prefer to pack with a side of carrot sticks to round out the meal. The kids will love it!!
