Spicy Turkey Chili Recipe

Today's Recipe: Spicy Turkey Chili
(altered from Cook Yourself Thin cookbook)
-1 TBS Olive Oil
-1 lb ground turkey breast (or lean ground beef)
-1 jalepeno, sliced
-salt & pepper to taste
-5 tsp chili powder
-3 tsp ground cumin
-3 tsp dried oregano
-pinch ground cinnamon
-1/2 red onion chopped
-3-4 garlic cloves, chopped
-2 carrots, sliced
-1 (14 oz) can diced tomatoes with juice
-3 chipotle pepper in adobo, chopped
-2 cups water
-1 TBS cocoa powder
-2 (14 oz) cans pinto (or kidney) beans, drained & rinsed
-1/2 cup chopped cilantro + 1/4 cup for serving

Directions: In large pot, heat oil, cook & stir turkey & jalepeno about 3 min. Add chili powder, cumin, oregano and cook- stirring about 3 min. Add onion, garlic, and 1/2 tsp salt. Cover & cook 5-7 minutes. Add carrots, tomatoes,  chipotle pepper, water, & cocoa powder. Bring to simmer, reduce heat to low & cook partially covered 25 minutes. Stir in beans & 1/2 cup cilantro and cook another 15 minutes. Serve with chopped green onion & cilantro.
