What's Cooking Wednesday - Chicken Tacos

So.... Last week I {Laura} shared my favorite taco seasoning recipe from Food Renegade in order to prepare you for today's post... This is my personal recipe for quick and easy chicken tacos... I probably make these 3-4 times per month! They are THAT good! And really, they are good for you... so that is just a win win!


Indigents
4-5 pounds of chicken breasts
1 tbsp olive oil (optional)
A double batch of the worlds best taco seasoning
1.5 cups water

Preparation

1. Trim any excess fat or 'yuckiness' off your chicken breasts... don't spend too much time trying to get all the fat since it will cook off in the pan too.

2. Cut each breast into about 4 equal size pieces.

3. Toss those pieces into a food processor for 30 seconds to 1 minute until well blended.
4. Place the now ground chicken into a pan with the oil - repeat until all chicken is ground.
5. Turn the heat on your stove to medium-high to cook chicken. Stir well to insure everything is fully cooked. Use your spatula to break apart the chicken into small pieces.

6. Once all the chicken is cooked drain off the fat! I typically will use 2-3 paper towels to collect any liquid in the pan.

7. Add the taco seasoning and about 1.5 cups of water to the pan. Reduce the heat to medium and cover the pan. Stir as often as you like - you can continue to break apart the chicken with the spatula if you want.

8. Let the mixture simmer until the water boils off and you are happy with the consistency of any 'sauce' that remains... very technical, I know....

The longer it simmers the better the flavors will combine.... also if you do not have a food processor, I think we got ours at Wal-mart for $50... not too bad!

And there you have it... my personal recipe on how to make chicken tacos... of course you can use whatever taco shells and toping you desire... my guilty pleasure is adding this meat to the scoop type tortilla chips and making nacos! Be careful not too add too many extra calories to this super lean meat!
