Stuffed Pepper Soup

This is probably my favorite diet dish because it does not taste low fat AT ALL!  It is so delicious, even my anti-low-fat-food-hubby agrees.  It's super easy to make and it comes out to be only a couple hundred calories a bowl.  Spark People is a great resource for anyone trying to be healthier, they have tons of great tools!  I entered this recipe in there to calculate the calories per cup and I remember being shocked at how low it was. 


Ingredients:
1 Ib. lean ground turkey
1/4 cup dehydrated onion flakes
1 cup hot water
1 jar (28 oz) spaghetti sauce
1 can (28 oz) diced tomatoes, undrained
2 cups cooked brown rice
2 cups chopped green bell peppers
1/4 cup packed brown sugar
2 teaspoons beef bouillon granules

Directions:
Cook turkey and onion over medium heat until no longer pink.  Combine meat mixture and remaining ingredients into a large pot.  Stir.  Bring to a boil.  Reduce heat, cover and simmer 30-40 minutes or until peppers are tender.

Yield: 10 servings
